Oh the weather outside is frightful…

But we’re staying toasty and warm inside! In fact, being stuck inside has given me a little bit of inspiration and has made me FINALLY want to start cooking again. Who’d of thunk?

Not only did I rock out an old school dinner last night, but as I sit here and write this, with JMB trying his hardest to crawl, I have bread getting ready to go in the oven and French Onion soup on the stove for dinner. Mama’s back!

Savor this super spicy dinner with a mock-arita (basically just tequila, triple sec, and a squeeze of lime) and a fire in the fireplace!

Spicy Thai Beef with Broccoli

In a large glass bowl, combine everything except the steak and the broccoli. Whisk to make sure all the sugar is dissolved and everything has been incorporated. Add in the steak and let sit at room temperature for 30 minutes. Flip the steak and let it sit for another 30 minutes at room temperature. Flip the steak 2 more times everything 30 minutes.

During the last 15 minutes of marinating, heat a cast iron skillet over medium heat and preheat the oven to 375 degrees.

Remove the steak from the marinade and place into the hot skillet. Cook for 5-7 minutes on each side for medium to medium-well. Remove from the skillet and allow to rest for 10 minutes.

While the steak is cooking, toss the broccoli in the marinade (yes it’s okay!) and put in a large casserole dish. Cook in the oven for 15-20 minutes.

When the meat is done resting, cut it against the grain into thin slices. Place the meat on top of some cilantro rice, the hubby made that, so I don’t have the recipe nor can I take the credit. Toss some broccoli on the plate, and BOOM! It’s like you’re living in the summertime again! Garnish with some additional cilantro and some jalapeƱos.

My thoughts:
This was so incredibly delicious, and beyond mixing all the ingredients, it was super easy to make. I put JMB in his high chair so he could watch mama mix everything and once he went to bed (in his own crib room…sad day!), we started cooking.

I will, without a doubt, be making this and several variations of this in the very near future. Stay warm!

    So glad to see you’re blogging again! Missed it… Did you use flank or skirt steak? I love kirt steak but whenever I make it its tough.
