Glad you found some inspiration.... 2 things - 1. Yes - we had the same problem with our Kaffir leaves - I think the key is - use the dried ones that are whole and look similar to bay leaves.... 2. I would consider maybe steeping the lemongrass. I personally enjoy the texture of them - but yes - they have to be boiled down and softened first. Can't wait to get me some of your soup! Love it! Glad you found some inspiration….
